American-French hybrid grapes Vidal and Baco Noir arguably find their best expressions in Niagara’s vineyards. The best wines come from the Niagara Peninsula, which borders New York and the famous Falls on its eastern edge. Ontario’s vineyards are scattered along the banks of Lake Erie and Lake Ontario, whose waters help regulate temperature. They’re making a name for themselves for their dry wines as well. More than 75% of Canada’s icewine is made in the province of Ontario, but Ontario isn’t just about the sweet stuff. Between December and February, winemakers wait for an ideal night to hand-harvest the frozen grapes berry by berry, clearing the vineyard before sunrise. The elixir is notoriously difficult to make.
